Chinook Salmon or King Salmon are not only the largest salmon species but contain the highest amount of omega 3’s and other fats that give it its rich flavor and smooth buttery texture. Fresh chinook usually has two runs a Spring run that usually starts at the end of April and a Fall run that starts in mid-September until mid-November. We do carry frozen which is available anytime.
