Our wild ling cod is fished off the Oregon coast mainly in the Newport area. This is a great fish whose mild flavor and texture sits between cod and halibut. In the wild a ling cod’s flesh can vary in color from white to light blue or green but always cooks to a beautiful pristine white with a firm yet tender texture with a large flake. Ling cod’s delicate flavor and texture lends itself to many cooking applications from pan searing to baking and grilling.
